A new food truck has hit the scene in Morristown and this time, it’s a franchisee, owned by a local couple.
Brian and Selena Musick have been married since August 5, 2022. Brian works as a supervisor at a local manufacturer, and Selena is a mulit-site community manager in Knoxville. Combined, the couple has three children: Cooper (19), Landon (12), and Taylor (11).
“When I relocated to Tennessee from Florida in July 2022, Brian and I bought our first home in October and then decided that it was time to figure out what our legacy will be and what our kids’ legacy will be,” Selena said.
“We dabbled with other ideas such as carpet cleaning companies, coffee shops etc., then we came across Crave Hot Dogs and BBQ. The food of course caught our attention and then we had the opportunity to speak with Sal.
Sal and Samantha Rincione are the founders of Crave Hot Dogs and BBQ franchise.
“After going back and forth with them about the options of a brick-and-mortar or a food truck we just knew that the food truck would be perfect for us,” Selena said. “What could possibly be better than a traveling hot dog and bbq truck? We started the process of the truck build in Jan 2023.”
The process include signing the franchise agreement and getting the financing of the truck approved. The actual truck builder is located in New Jersey. While the truck was being built, the couple went into planning mode, making sure the supplies were ordered, obtained insurance for the truck and business, and procured business licensing.
“I started doing all the marketing to get business up and running, Selena said. “I joined the Morristown Area Chamber of Commerce.
Selena spent time getting prepared financially, making sure the couple had accounting software, suppliers etc. She explaned that the franchise is a support system, not a full-line provider.
“They had the fundamental basics of what was necessary, but they are located in New York. The laws and requirements are different in Tennessee,” Selena said.
She did a massive amount of research: “I had no idea about the monthly taxes. But I learned it really quickly,” Selena said.
The truck offers a full service menu – and it plays music. The staff includes Brian and Selena, Annette Musick (Brian’s mother) is the food truck manager, full time. The cook is Michael Pearson, a family friend. He was certified and has been helping getting the truck ready, Selena said. He was a restaurant manager previously.
“We are so excited. It has been such a process of waiting, etc,” Selena said. “We also didn’t realize how time consuming and expensive the startup would be.
And the result is a unique experience.
“Everyone I’ve met so far describes it as a ‘bougie truck.’ For example, the menus are digital. There’s the music, and the truck lights up. It’s basically entertainment on wheels. It’s a sight to see for sure!: Selena said.
Brian is from Morristown – “I came up here on a family vacation and we met here a little over a year ago,” Selena said.
In May, the couple traveled to Texas where they met with other food truck owners in the franchise who have now become great friends. The couple also met with the established owner of a brick-and-mortar and a food truck right there in Texas.
“We just knew after that weekend we had made the right decision! Selena said. “After months of waiting our food truck was finally delivered on July 7.”
Ecstatic, the couple got to work; after a long weekend of cleaning and prepping they passed the health department inspection on July 10.
“We could have never imagined what a process and how much work goes into a food truck, and I don’t think anybody really could until they jumped in with both feet first.” Selena said.
“It has not always been the least stressful process, there have been nights and weekends already without the truck of no sleep, and there have been sacrifices that we have made as a team to be prepared the best we can, but man has it been worth it for us.
“We have a great team in place!
Brian’s mom Annette has been such an asset and the #1 cheerleader on our team and our cook Michael has already swooped in and jumped in with both feet. The community outreach has been incredible, and I have already learned so much from some local food trucks such as Two Shy Chefs and Grill Billy Smoke.
The other food trucks in the area have been super helpful, according to Selena, who described the food truck network as being like a little family.
There are plans – the couple has discuss their thoughts of a brick and mortar location wihin the next three years. Or possibly a fleet of trucks – “And we need a food truck park, with a pavilion,” Selena said.
“While we know we won’t have all good days and we will face our share of trials and tribulations I believe and will always believe we will have success with the hard work and dedication of us together. We can’t wait to see what the future holds for us and our family and we are so grateful to be able to have this opportunity,” Selena said.
